On an unrelated note, I bet you didn’t know that Thursday (September 2) was World Coconut Day. So, in honor of that, I have a toasted coconut pancake recipe for you — trust me, they were to die for. I also have a skincare brand from New Zealand that makes soap and shampoo bars, starring coconut as one of their main ingredients.

Vegan toasted coconut pancakes

To celebrate World Coconut Day (yes, I actually did), I tried these vegan toasted coconut pancakes from the Minimalist Baker. They were absolutely delicious, super hearty and oh-so-coconutty. Toasting the shredded coconut was key, it added the most delicious roasted nutty flavor. The recipe uses a vegan flax egg (flaxseed meal and water) as an egg replacement, and I honestly couldn’t taste the difference. The pancakes are sweetened with coconut sugar and maple syrup (or agave), and are just the right amount of sweet. I had them with an extra splash of maple syrup and my favorite Blue Tokai coffee with oat milk (for those of you in India, I get mine from Urban Platter), and it was the perfect brunch. Photo: Minimalist Baker

If you’re looking to make the switch to solid skin and hair care products (I switched over to soap bars a few years ago and haven’t looked back since), Ethique has them all: from shampoo and conditioner bars, to bar soaps and even facial moisturizer sticks. One of their star ingredients is (you guessed it) — coconut! Their Frizz Wrangler shampoo bar is as coconutty as it gets. Perfect for those of us with dry or frizzy hair, this bar is made with fair trade Samoan coconut oil and coconut butter, and will leave your hair feeling silky-smooth and smelling divine. For first-timers, they also have a sampler pack that comes with three shampoo bars and two conditioners (shaped like the cutest little hearts), so you can choose the ones that work for you.

And of course it checks off the standard boxes: it’s a certified B-Corp brand, Leaping Bunny certified, palm oil-free and the packaging is zero plastic. Finally, while they do offset their carbon emissions (they partner with Ecologi to plant one tree for every order), they’re transparent about the fact that offsetting isn’t enough — their office is powered by 100% renewable energy, and they review their emissions every year to try and reduce them. Photo: Ethique
